I made it yesterday morning for breakfast, but it was way too much for me to eat in one sitting, so Buster really enjoyed himself. :)

Try it out. I've seen other recipes that take much less time in the microwave to make. I don't know if it's because my microwave is particularly low-powered or if my particular combination of ingredients made it take forever. I ended up microwaving mine for about 6 minutes, which I think is too long to consider this is a time-saver. I think I might omit the milk (or decrease to one tablespoon) next time. Also, if I halved this recipe to feed just me (and not my dog too!) it would take much less time. I'll definitely play around with it.
I did ham and cheddar cheese this time, because that's what I needed to use up. I also squirted some Sriracha on top of my portion, because it is so good with eggs. A different hot sauce could work, but I prefer Sriracha. You could use just egg whites too. I've done that with feta and spinach before. It was pretty awesome.
Some other good omelette microwave combinations:
- Herbs (dill, chives, parsley), scallions, and goat cheese
- Feta and spinach
- Bell pepper, cooked sausage, and mushrooms
Microwave omelette
(serves 1 woman and 1 small dog)
Ingredients
3 eggs
3 tbsp milk (I used whole, because that's what I had--skim, 2%, half and half are all fine to use)
a handful of shredded cheddar cheese (use swiss, if you like that sort of thing ::shudder::)
a couple slices of deli ham, torn into small pieces
salt and pepper, to taste
Preferred condiment: Sriracha or other hot sauce. My grandma loved salsa on her omelettes.
Crack eggs into a largish cereal bowl and whisk in the milk with a fork. Add salt and pepper and stir again. Stir in the ham and cheese. Place in the microwave and cook in two-minute increments, until the egg is no longer runny in the middle. If it's cooked on top, poke through the middle with a fork and check to make sure it's done all the way through.

We should've done this in college when we didn't have a stove!
Yeah, it would definitely have helped lessen our dependence on Wawa hoagies in our junior year!
