This is wizardry. Like, serious magic. This YouTube Video from the Simple Cooking Channel was being passed around on tumblr and I figured I'd give it a shot:
All you need is two cups of ice cream (apparently, any flavor will do!) and 1.5 cups of self-rising flour. I used all-purpose flour and added two teaspoons of baking powder, since I never have self-rising flour on hand. I wanted to kick up the vanilla flavor (because my ice cream wasn't the best quality) and see if I couldn't get a "funfetti" feel, so I also added 2 tsp vanilla bean paste, 2 tbsp melted butter, and 1/4 cup of nonpareils (the tiny sprinkles).
This makes for a quick, tasty, cake-like treat that you can whip up, even if your pantry is sad and mostly bare. Just ice cream and flour, y'all!
Two- (or Three- or Four- or Five-) Ingredient Ice Cream Bread
(makes 1 loaf)
Essential Ingredients:
2 cups softened ice cream (I used vanilla, but any flavor should do)
1 1/2 cups self-rising flour (or, use all-purpose with 2 tsp baking powder added)
Potential Adds (I would limit myself to 1 cup total mix-ins):
1/4 cup sprinkles
2 tsp cinnamon
1 cup berries (fresh or frozen)
1 cup chocolate chips
1/2 cup chopped nuts
1/2 cup coconut flakes
2-3 tsp lemon or lime zest
1/4 cup lemon or lime juice
Potential Toppers
Whipped cream
Frosting
Lemon Glaze (1/4 cup lemon juice mixed with 1 cup powdered sugar)
Preheat oven to 350 degrees and spray a loaf pan with cooking spray.
Combine flour and ice cream together, stirring by hand to incorporate all the flour. Stir in additional ingredients until just incorporated. Pour batter into loaf pan. Cook 30-35 minutes, checking at the 25-minute mark for doneness. You'll want a toothpick to come out clean.

Definitely do! I bet this would be good using butter pecan or strawberry ice cream.
