I like spicy things, as you may well know. When I eat food with people who also like spicy food (or will, at least, tolerate it) then I usually end up going a little wild with the pepper/red pepper/gochu garu/hot sauce. I tell you this, because I want to be admired for my restraint in this recipe. I only used one chipotle pepper and only added a quarter of a teaspoon of black pepper. Does that not deserve a pat on the back, friends?
This is a super easy recipe. All you do is chop up half a small onion and half a bell pepper (you choose the color) and let them cook in a pan for a few minutes before adding in the eggs, chopped chipotle pepper, parlsey, and seasoning. Throw on your cheese and let the eggs cook for another 2-4 minutes before breaking it up with a wooden spoon or spatula (scramble it!). Let the eggs cook all the way through and then blammo! You have a delicious Southwestern scramble.
This could be a nice "forage" recipe too, because you wouldn't have to stick to this recipe to get something awesome that would feed four people tidily. If you're planning on having a few people over for breakfast, but are low on funds, you can get pretty far with a dozen eggs, a little cheese, your leftover fresh veg and/or meat, and a loaf of bread (for toast). Mixing the eggs, cheese, and toppings up and frying them in the pan will get you a pretty tasty scramble/frittata/omelet. Serve with buttered toast, and you've got a relatively cheap meal.

Chipotle cheddar scrambled eggs with onions and peppers
(serves 2 people as a main, 3-4 as a side)
In a large pan, melt 1 tbsp unsalted butter over medium-high heat. When the butter has melted, add 1/2 cup diced onion and 1/2 cup diced bell pepper and cook for 3-4 minutes. While the veggies cook, crack 6-8 large eggs in a bowl and add 1/4 cup milk, 1 chopped chipotle pepper in abodo sauce, 2 tbsp chopped parsley or cilantro, 1 tsp salt, and 1/4 tsp black pepper. Whisk the mixture together until the eggs are completely beaten (you know, totally downtrodden :)). Pour the eggs into the pan and let it cook for a couple minutes, then sprinkle 1/2 cup of cheddar cheese over the eggs and stir the eggs around, scrambling them. Take the eggs off the stove when they're cooked through completely and serve immediately. With hot sauce, if you like'em spicy.
